Back in business
Amid a new interior that includes repurposed barn wood on the backbar, Jorge’s employee Johnny Echeandia carries a tray of food and drinks. After being closed nearly a year for a roughly half-million-dollar renovation, the Old Colorado City Mexican-food restaurant reopened this week. “Heck, yeah,” owner Jorge Ayala said, when asked if it felt good to be back in business. The long-delayed project stayed challenging right to the end. Because of the need to stay on top of the final government inspections, “I couldn’t even enjoy the Broncos’ win in the playoffs,” he said with a grin.
